Ingredients
- 4 cod fillets 5-6 oz. each
- 1 tsp. garlic powder
- 1 tsp. paprika
- 1/2 tsp. Italian seasoning
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1-1/2 Tbsp. organic extra virgin olive oil
Gremolata Sauce
- 1 cup parsley finely chopped
- 1 clove garlic grated
- Zest from 1 lemon
- Juice from 1/2 lemon
- 1/2 cup organic extra virgin olive oil
- Salt to taste
Instructions

Preheat oven to 400 degrees F and line baking sheet with parchment paper.

In small bowl combine garlic powder, paprika, Italian seasoning, salt and pepper. Stir to mix ingredients together.

Place cod filets on parchment lined baking sheet and pat dry with paper towel. Sprinkle seasoning mixture on each filet.

Drizzle each filet with extra virgin olive oil. Bake 10 minutes or until cod reaches internal temperature of 145 degrees F.

For gremolata sauce, in medium bowl, combine parsley, garlic, lemon zest, lemon juice and olive oil. Stir until well combined. Season with salt to taste.

To serve, plate cod and spoon gremolata sauce over top.
