Ingredients
- 4 cups old-fashioned oats
- 1 cup cashews chopped
- 1 cup unsweetened coconut flakes
- 1 Tbsp. ground cinnamon
- 1 tsp. kosher salt
- 1/2 cup olive oil
- 1/2 cup maple syrup
- 1 cup dried fruit such as cherries, chopped apricots, raisins or a mix, optional

Preheat the oven to 300 degrees F.

In large bowl, stir together oats, cashews, coconut, cinnamon and salt.

In glass measuring cup, combine oil and sweetener. Warm in microwave for 10 to 15 seconds, until pourable.

Add liquid mixture to oat mixture and stir to combine.

Divide mixture between two baking sheets, spreading it into single even layer.
