No-Bake Fudgy Coconut Cookies with Collagen
Snacking has never been so good for your skin! Boosted with collagen peptides, this recipe promotes beauty and joint health in every fudgy bite. With a pure, clean source of protein, healthy fats and fiber, these cookies really do have it all – and they don’t even require baking.
1/2 cup coconut butter
3 ripe bananas
1/4 cup collagen peptides
1/2 cup unsweetened cocoa powder or raw cacao powder
2 cups unsweetened coconut flakes
1/2 cup hemp hearts
1/2 cup salted almonds
- In oven-safe, medium-sized bowl, melt coconut butter in warm oven.
- Add bananas and mash until smooth. Stir in collagen peptides and cocoa powder. Then, add coconut flakes, hemp hearts and salted almonds and stir until combined.
- On parchment-lined baking sheet, drop dough by spoonfuls.
- Refrigerate until firm (30-60 minutes).
