Gluten-Free Caramel Apple Blondies

Caramel sauce

  1. In saucepan over medium heat, combine brown sugar, butter and milk; bring to boil. Cook until thickened, 1 to 2 minutes.
  2. Remove from heat and stir in vanilla extract.

Blondies

  1. Preheat oven to 350 degrees F. Line an 8x8-inch pan with sheet of parchment paper.
  2. In medium-sized bowl, mix together butter and brown sugar. Beat until light in color.
  3. Add egg, vanilla extract, salt, cinnamon and flour and stir to combine. Fold in apple pieces.
  4. Scoop half of batter into prepared pan and flatten. Pour caramel sauce over dough. Add remaining dough evenly over caramel.

  5. Bake about 30 minutes, until toothpick comes out clean.
