Cashew “Cheesecake” with Hazelnut-Date Crust

Cheesecakes are notorious for being difficult to make, which is why this no-bake version is such a dream. Requiring only a high-speed blender, this dessert might take a few hours to set, but the prep is as smooth as, well, cheesecake! The crust is rich and chewy with the sweet flavor of dates and hints of hazelnut, and the cashew-based filling, enhanced with natural maple syrup and lemon juice, is luxurious, creamy and satisfies even the most dedicated cheesecake aficionados.

Cashew “Cheesecake” with Hazelnut-Date Crust

Ingredients

Cashew center

Chocolate layer

Instructions

  1. In mixing bowl, combine all crust ingredients until well combined. Use fingers to mash up dates. Alternately, use food processor to combine all crust ingredients. (Note: Mixture should be relatively dry, but moist enough to hold together.)
  2. Into baking pan lined with parchment paper or greased with coconut oil, press crust mixture onto bottom of pan. Set aside.
  3. In high-speed blender, combine all filling ingredients until very smooth and light in texture. (Note: There should be no chunks.)
  4. Into pan with crust, pour half the filling, leaving other half in blender.
  5. To blender, add cacao powder and mix until well combined and smooth.
  6. Pour on top of cheesecake layer.
  7. Refrigerate to set 4 hours. Cut into slices to serve.
