Veggie & Chicken Couscous

This light yet satisfying meal is packed with colorful vegetables and tender chicken, making it a healthy choice for the whole family. Work weeknight magic in about a half an hour.

Ingredients

Instructions

  1. Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
  2. Moisten sliced chicken with water or egg wash and coat with breadcrumbs on each side.
  3. Heat frying pan to medium heat, spray with oil and sear chicken 5 minutes per side. Place chicken on baking sheet and continue cooking in oven 15-20 minutes until cooked through.
  4. In medium sauce pan over medium-high heat, heat 1 tablespoon olive oil and sauté squash and peppers 10 minutes; stir in spices. Move veggies to large serving bowl.
  5. In rinsed sauce pan, prepare couscous according to package instructions.
  6. Toss cooked couscous with veggies along with parsley, lemon juice and olive oil.
  7. Serve chicken over top of veggie couscous.
