Ingredients

  • Powdered monkfruit sweetener
  • Cherries or pomegranate seeds
  • Mint leaves

Instructions

  1. Preheat oven to 350 degrees F.
  2. In medium mixing bowl, combine almond and coconut flour, sweetener, spices and salt.
  3. In separate bowl, add eggs, vanilla, coconut oil and vegan butter.
  4. Add dry mixture into wet mixture. Mix until well combined.
  5. Pour into greased bundt pan.
  6. Bake for 45-50 minutes or until toothpick comes out clean.
  7. Remove from oven and cool.
  8. Decorate with powdered monkfruit sweetener, unsweetened coconut flakes, cherries or pomegranate seeds and fresh mint leaves.
