  1. Preheat oven to 350 degrees F. Line or grease 12-cup muffin tin.
  2. In large bowl, mix together oat flour, protein powder, baking powder, baking soda and salt.
  3. In separate, smaller bowl, mix together almond milk, coconut oil, maple syrup and vanilla extract.
  4. Add wet ingredients to dry ingredients; mix until well-combined. Fold in chocolate chips.
  5. Pour ¼ cup batter into each muffin well. Bake 18 to 20 minutes.
