A beloved holiday side dish… now in bite-size form! These green bean casserole bites bring all the nostalgia of the classic – creamy sauce, tender veggies and that irresistible crispy-onion crunch – tucked into perfectly golden phyllo cups for easy snacking and sharing. Fresh green beans and baby bella mushrooms get sautéed to savory perfection before being swirled into a silky oat milk broth with nutritional yeast for rich, cheesy flavor (no dairy necessary!). Topped with vegan fried onions and baked until bubbly, every handheld cup delivers a satisfying mix of textures in just one bite. Ideal for parties, potlucks or a fun twist on your holiday table – no casserole dish required.

Ingredients

Instructions

  1. Preheat oven to 350 degrees F.
  2. In large skillet over medium heat, add olive oil. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook another minute until fragrant.
  3. Add trimmed green beans and sliced mushrooms to skillet. Cook, stirring occasionally, until green beans are tender-crisp and mushrooms are softened, about 8-10 minutes.
  4. Sprinkle all-purpose flour over green bean mixture and stir well to coat everything evenly. Cook 1 minute, stirring constantly.
  5. Gradually pour in vegetable broth and plant-based milk, stirring constantly to prevent lumps from forming. Bring mixture to simmer and cook until sauce has thickened, about 3-5 minutes.
  6. Stir in soy sauce, salt, black pepper and nutritional yeast. Taste and adjust seasonings as needed.
  7. Remove skillet from heat and stir in 1/2 cup vegan fried onions, reserving remaining 1/4 cup for topping.
  8. Place phyllo dough cups on a baking sheet.
  9. Spoon green bean mixture into phyllo dough cups, filling each cup to the top.
  10. Sprinkle remaining 1/4 cup vegan fried onions over top of the filled phyllo cups.
  11. Bake in preheated oven 10-15 minutes, or until the phyllo cups are golden brown and filling is heated through.
  12. Remove from oven and let cool a few minutes before serving.
