Many may want it, but few will have it. A coal fire oven is not exactly a household staple. It’s actually quite the investment – even for those with a dream kitchen. But you can get much of the same smoke and flavor when you try this grilled peach pizza. All you need is your basic backyard grill (gas or charcoal) and a hot skillet. Of course, the pizza itself won’t be basic. You’ll top it with maple-caramelized onions, warm, gooey peaches and fresh mozzarella for a restaurant-level flatbread that didn’t require a personal loan or second mortgage. How ‘bout them peaches?

Ingredients
- 1 fresh pizza dough or gluten-free pizza crusts
- 6 stalks asparagus
- 2 peaches cut in half
- 1/2 cup red onion thinly sliced
- 5-6 thin slices mozzarella cheese
- 3 oz. prosciutto
- 1 tsp. maple syrup
- Olive oil
- Salt and pepper to taste
Instructions

Preheat grill to high.

Roll out dough to desired thickness and shape. Set aside.

Heat a skillet over medium. Add red onion slices, salt and pepper. Cook 10 to 12 minutes.

Add maple syrup, stir to combine, and then remove from heat.

Drizzle olive oil over asparagus and peaches. Season with more salt before placing on the grill. Cook about 5 minutes, making sure to get some good grill marks on those peaches. Remove from heat.

Rub olive oil on pizza dough, and then transfer to the grill. Cook about 2 minutes each side, or until toasted.

Lower heat on grill. Sprinkle mozzarella over pizza dough and let cook a few minutes, or until cheese starts to melt.

Add onions, sliced peaches, asparagus, prosciutto and fresh basil (if desired). Cook another minute, and the remove from grill.

Serve immediately.
