Salad
- 2 cups kale torn into bite-size pieces
- 2 cups shredded red cabbage
- 1 cup chopped red bell pepper
- 1 cup shelled and cooked edamame
- 2 Persian cucumbers diced
- 1/2 cup cashews
- 1/2 cup Navitas Organics Mulberries
- 1/2 cup Navitas Organics Goji Berries
- 2 Tbsp. Navitas Organics Hemp Seeds
- 1/2 cup chopped cilantro
Dressing
- 1/4 cup extra virgin olive oil
- 1/4 cup + 2 Tbsp. apple cider vinegar divided
- 1 large carrot
- 1- inch ginger
- 1 shallot
- 1-1/2 Tbsp. tamari
- 1-1/2 Tbsp. maple syrup
- 1/2 tsp. Navitas Organics Turmeric Powder
- 2 Tbsp. water
- 1 tsp. sea salt plus more to taste

In high-speed blender, combine all dressing ingredients and blitz until smooth. Taste and add more salt, if desired.

In large bowl, combine kale, cabbage, bell pepper, edamame, cucumber, cashews, goji berries, mulberries, hemp seeds and cilantro. Toss together well.
