Ingredients
Overnight Oats
- 1-1/2 cups organic rolled oats
- 3 Tbsp. chia seeds
- 3 Tbsp. poppy seeds
- 3 Tbsp. unsweetened coconut flakes
- 3 Tbsp. dark maple syrup
- 1 tsp. pure vanilla extract
- 4 Tbsp. lemon juice
- 1 Tbsp. lemon zest
- 2 cups almond milk or milk of choice
Raspberry Jam
- 3 cups raspberries fresh or frozen
- 3 Tbsp. chia seeds
- 4 Tbsp. dark maple syrup
- 1 tsp. pure vanilla extract
- 1 tsp. lemon juice
Instructions

In large mason jar or container with lid, combine ingredients for overnight oats; mix well. Refrigerate overnight or 2 to 4 hours.

In blender or food processor, combine raspberry jam ingredients. Process until desired consistency is achieved for jam.

To assemble, layer raspberry jam and overnight oats in preferred order – jam on top or bottom. Optional: Top with fresh raspberries, coconut flakes and lemon zest.

Serve cold or room temperature. Refrigerate up to 2 days.
