These lemon poppy seed overnight oats are just as satisfying as your favorite muffin, yet even more satiating! Mix rolled oats with chia seeds, poppy seeds, lemon juice, lemon zest, vanilla extract, maple syrup and nut milk. Transfer to the fridge where ingredients merge and flavors fuse. Blend a raw raspberry jam for a pop of color and even more sweet tanginess. By morning, you’ll have a scrumptious breakfast that fills your body with fiber, fatty acids, vitamins and minerals.

Overnight Oats

Raspberry Jam

Instructions

  1. In large mason jar or container with lid, combine ingredients for overnight oats; mix well. Refrigerate overnight or 2 to 4 hours.
  2. In blender or food processor, combine raspberry jam ingredients. Process until desired consistency is achieved for jam.
  3. To assemble, layer raspberry jam and overnight oats in preferred order – jam on top or bottom. Optional: Top with fresh raspberries, coconut flakes and lemon zest.
  4. Serve cold or room temperature. Refrigerate up to 2 days.
