Matcha & Honey Ice Pops with Coconut Milk

Ingredients
- 26 oz. canned full-fat coconut milk , cream portion only (from 2, 13-oz. cans)
- ¾ cup honey
- 1 cup ice
- 2.5 Tbsp. lemon zest
- 1 Tbsp. matcha
- ½ cup shredded coconut optional
Instructions

In blender or food processor, combine all ingredients and mix until completely smooth and well combined, scraping down the sides of the bowl as necessary.

Taste mixture and adjust lemon and honey to taste.

Pour mixture into popsicle molds and place stick or lid into each to seal.

Freeze for at least 3 hours.

If desired, sprinkle with additional matcha powder to serve.
Recipe Notes
To remove from ice pop mold, run each popsicle under warm water for about 5 seconds.
