We want to feel comfort after a meal, not like we’re in a food coma! Here, an easy and creamy cauliflower Alfredo tops gluten-free pasta in an expert vegan take on a classic Italian dish. Cauliflower is a great choice for vegan cream sauces as it’s velvety, light and similar in texture to a typical cream-based sauce. The richness gets kicked up a notch with the addition of cashew cream cheese. With this dish, indulgence is simply blissful.

Ingredients

Alfredo sauce

Instructions

  1. Cook pasta according to package directions; drain and set aside.
  2. In saucepan, boil cauliflower florets in water until soft, about 15 minutes. Drain.
  3. In medium saucepan over medium heat, sauté garlic and shallot in coconut oil until fragrant and golden.
  4. Meanwhile, in blender, combine cauliflower and remaining Alfredo sauce ingredients. Blend on high until creamy and smooth. Add to saucepan.
  5. Stir in cream cheese, vegan parmesan and pasta.
  6. Serve with sprinkle of parmesan and pepper.
