Ingredients
Pistachio cream
- 1 tsp. pink salt
- 1 cup pistachios roasted or raw
- 1/2 cup coconut cream
Dry ingredients
- 1/2 cup buckwheat flour
- 1-1/2 cup all-purpose flour
- 1 tsp. cornstarch
- 2 tsp. baking powder
- 2/3 cup light brown sugar
Wet ingredients
- 1 Tbsp. egg replacer
- 1 tsp. apple cider vinegar
- 1 tsp. vanilla extract
- 1/4 cup pistachio oil
- 1/3 cup avocado oil
Simple glaze
- 1/2 cup powder sugar
- 3 Tbsp. coconut cream
- 1/8 tsp. pink salt
- 1/2 tsp. vanilla extract
Instructions

In high-speed blender, add pistachios, sugar and coconut cream. Blend until smooth and set aside.

In medium bowl, sift dry ingredients and set aside.

In large bowl, prepare egg-replacer according to package directions. Add wet ingredients and mix until well combined.

Into same bowl, add pistachio cream mixture.

Add dry ingredients to wet ingredients and mix until well combined.

Preheat oven to 350 degrees F.

Divide batter into two loaf pans. Bake 35-40 minutes or until toothpick comes out clean.
