Instructions

  1. Preheat oven to 350 degrees F.
  2. Lightly oil 8x8-in pan.
  3. In mixing bowl, combine dry ingredients (excluding almonds). Add pumpkin, beaten egg and vanilla. Mix well.
  4. Bake for 20-25 minutes. Remove pan, top mixture with toasted almonds. Bake another 5-10 minutes or until golden brown.
  5. Remove from pan and serve.
