Ingredients
Salad
- 5 cups fresh spinach chopped
- 2 cups cooked quinoa
- 1 whole apple sliced thin
- 1/3 cup dried cranberries
- 1/3 cup crumbled goat cheese or feta cheese
- 1/2 cup walnuts roughly chopped
Dressing
- 1/3 cup olive oil
- 1 Tbsp. lemon juice
- 2 Tbsp. apple cider vinegar
- 2 tsp. Dijon mustard
- 1 tsp. minced garlic
- Salt to taste
- Black pepper to taste
Instructions

In large bowl, combine all salad ingredients.
