Ah, barbecue. Such good-time food! But when you can’t fire up the grill for the whole experience, this recipe recreates a smoky favorite in your slow cooker. By combining lean chicken breast with juicy thighs, this pulled chicken achieves the perfect moist and meaty texture. For the sauce, you’ll start with a mustard base, then add simple pantry staples to reach next-level tanginess with the perfect hint of sweet. Serve on toasted buns with some homemade coleslaw and throw a barbecue in the great indoors!

Slow Cooker Barbecue Pulled Chicken

Ingredients

  • 1-½ lb. chicken breasts boneless and skinless
  • 1-½ lb. chicken thighs boneless and skinless
  • ¼ tsp. salt
  • ¼ tsp. black pepper
  • ½ cup water

Barbecue sauce

Instructions

  1. To slow cooker, add chicken, salt, pepper and water.
  2. Cook on high for 4 hours or low for 6-7 hours.
  3. In small sauce pan, combine all barbecue sauce ingredients and bring to boil while whisking. Remove from heat.
  4. Remove chicken from slow cooker and transfer to mixing bowl. Using two forks, shred chicken, discarding fatty bits from thighs.
  5. Add desired amount of sauce to chicken; stir and toss to combine.
  6. Serve on buns.
