Holy smokes! These chocolate brownies are made from ingredients that are actually good for you? You better believe it. Black beans, a unique brownie ingredient that’s impossible to detect, provides a fudgy texture and lots of protein. Mixed with fresh mint leaves and cacao – an antioxidant-rich superfood – you will feel anything but guilt after indulging in this dessert. To get started, simply combine all the ingredients in a blender (so easy!) and pour into a pan. Use your smoker for a campfire-esque finish or an oven to do the rest.

Smoked Black Bean & Mint Brownies
Ingredients
- 15 oz. black beans drained & rinsed
- 4 chopped mint leaves
- 1/3 cup coconut oil, melted
- 1 tsp. vanilla extract
- 1/4 cup honey
- 1/4 cup coconut sugar
- 2 Tbsp. cacao powder
- 1/2 tsp. baking powder
- 1/4 tsp. sea salt
- 2 large eggs
- 3/4 cup chocolate chips, divided

Preheat oven or smoker to 350 degrees F.

In blender, combine all ingredients expect chocolate chips. Blend until smooth.

Add half the chocolate chips and fold. Pour into greased 8 x 8 baking pan. Top with remaining chocolate chips.

Bake 25-30 minutes until inserted toothpick comes out clean. Cool for 5 minutes before serving.
