Fajita sauce
- 6 Tbsp. SunButter Sunflower Butter
- 2 Tbsp. vegan butter or oil
- 2 tsp. garlic minced
- 4 tsp. ginger diced
- 2 Tbsp. hot sauce
- 1 Tbsp. Braggs Apple Cider Vinegar
- 1 Tbsp. cumin
- 1/4 cup coconut sugar
- 1/4 tsp. turmeric
- 1/4 tsp. Redmond Real Salt Sea Salt
- 1 lime juice only
- 2 Tbsp. Bragg Liquid Aminos
Optional
- 1 tsp. red chili flakes
Guacamole
- 1 avocado
- 1 lime juice only
- 1/8 tsp. garlic salt
- 1/8 tsp. black pepper
- 2 Tbsp. fresh cilantro diced
Instructions

Preheat oven to 350 degrees F. Roll each tortilla into cone shape and secure in place with toothpicks. Bake about 10 minutes.

In bowl, add all ingredients for guacamole and mash with fork until well combined.

In bowl, add all ingredients for fajita sauce and mix until well combined and smooth.

In medium frying pan over medium heat, heat oil, add onion and garlic and stir fry 3 minutes. Add chicken or tempeh strips and stir fry 2 minutes. Finally, add fajita sauce and stir fry 4 minutes or until chicken or tempeh is cooked through.

To assemble cones, fill each with lettuce, chicken and corn. Top with guacamole. Arrange upright, nestled in basket or bowl.
