If you think for a nanosecond that gluten- and refined sugar-free desserts can’t be delicious and decadent, think a nanosecond more. These turtle-inspired brownies are a craveable combination of gooey, chewy and chocolatey. Begin with the ease of an almond flour brownie mix, add a touch of sunflower butter, buttery coconut oil and pecans. Stir up the caramel sauce with all good things like honey, maple syrup and more sunflower butter for caramel flavor. The whole sweet treat comes together as a fudgy, cakey brownie base studded with pecans and a glorious drizzle of better-for-you caramel.

Instructions

  1. Preheat oven to 400 degrees F. Line 9 x 9 pan or 6 x 10 pan with parchment paper.
  2. In large mixing bowl, mix sunflower butter and buttery coconut oil or vegan butter with water. (Note: Use this buttery mixture in place of 1/2 cup oil or butter stated on package directions.)
  3. Whisk in eggs and ½ cup pecans.
  4. Add baking mix and stir until well combined.
  5. Pour into pan. Bake 18-22 minutes until toothpick inserted in center comes out clean. Let cool one hour.
  6. In bowl, combine all ingredients for caramel, stirring until completely smooth.
  7. Cut brownies into bars. Sprinkle 1/3 cup pecans over top and drizzle on caramel.
