Sneak some nutrition onto your kids’ plate with these oven-baked chickpea nuggets. They may look like drive-through fare, but these crispy golden-to-perfection bites are 100 percent plant-based, made with chickpeas and oats. Pair them with ketchup, BBQ sauce or agave for dipping.

Crispy Baked Chickpea Nuggets

  1. Preheat oven to 375 degrees F. On parchment-lined baking sheet, spread out breadcrumbs in even layer. Bake for 5 minutes. Remove from oven and cool completely. Transfer to shallow dish.
  2. In food processor, pulse chickpea liquid, chickpeas, oat flour, agave and seasonings until smooth.
  3. To form nuggets, scoop out about 1-1/2 tablespoons chickpea dough and form them into 1/2-in.-thick rectangles, then gently round the edges.
  4. Place nuggets into breadcrumbs to evenly coat.Tip: If breadcrumbs need help sticking, lightly coat nuggets in oat milk or water. Arrange coated nuggets on prepared baking sheet.
  5. Bake for 20-25 minutes, flipping halfway through, or until browned and crispy. Serve with your favorite condiments.
