Something about peanut butter cookies tugs a little extra on those childhood-memory heartstrings. We remember sneaking fingerfuls of peanut butter while mixing the dough, carefully pressing each cookie with the tines of a fork, and swooning from the all-encompassing aroma while waiting to taste our creation warm out of the oven. By incorporating almond flour, these classic cookies get a healthy upgrade to gluten-free. And almonds boast extra nutritional benefits. Consider them grown up just enough. Bake these up in 10 minutes and feel transported to simpler times.
