Almond Flour Peanut Butter Cookies

By incorporating almond flour, these classic cookies get a healthy upgrade to gluten-free. And almonds boast extra nutritional benefits. Consider them grown up just enough. Almond Flour Peanut Butter Cookies

  • ½ cup unsalted butter (room temperature)
  • ¼ cup crunchy peanut butter
  • ½ cup smooth peanut butter
  • 1 cup cane sugar
  • 1 egg
  • 1 tsp. bourbon vanilla extract
  • 2 cups almond flour
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • Chocolate chips (optional)
  1. Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
  2. In large bowl, beat together butter, peanut butter, sugar, egg and vanilla until combined.
  3. Add salt, baking powder and flour and mix until combined. Stir in chocolate chips, if desired.
  4. On baking sheet, use cookie scoop to portion out 12 cookies. Using a fork, lightly press each cookie for pattern.
  5. Bake for 10 minutes or until golden-brown. Cool on wire rack.
