We remember sneaking fingerfuls of peanut butter while mixing the dough, carefully pressing each cookie with the tines of a fork, and swooning from the all-encompassing aroma while waiting to taste our creation warm out of the oven. By incorporating almond flour, these classic cookies get a healthy upgrade to gluten-free. And almonds boast extra nutritional benefits. Consider them grown up just enough. Bake these up in 10 minutes and feel transported to simpler times.

Almond Flour Peanut Butter Cookies

  1. Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
  2. In large bowl, beat together butter, peanut butter, sugar, egg and vanilla until combined.
  3. Add salt, baking powder and flour and mix until combined. Stir in chocolate chips, if desired.
  4. On baking sheet, use cookie scoop to portion out 12 cookies. Using a fork, lightly press each cookie for pattern.
  5. Bake for 10 minutes or until golden-brown. Cool on wire rack.
