Ingredients
- 2 bananas, ripe, cut into 2” chunks and frozen
- 1 cup frozen blueberries
- ¼ cup unsweetened soymilk
- 1 Tbsp. peanut butter or almond butter
- 2 tsp. vanilla extract
- 1/8 tsp. salt
Optional: sprinkles, cacao nibs, unsweetened coconut flakes, fresh blueberries
Instructions

In high-speed blender or food processor fitted with an “S” blade, add bananas, blueberries, soymilk, nut butter, vanilla and salt.

If using high-speed blender, blend on medium low using a tamper to move fruit so that it blends evenly. Blend until ingredients are combined and smooth, resulting in a soft-serve ice cream consistency.

If using food processor, process ingredients until smooth, stopping occasionally to scrape sides with rubber spatula. This may take 3-4 minutes, especially if bananas are very frozen or cut into large chunks.

Scoop into individual serving bowls and sprinkle with desired toppings. Serve immediately.
