Cherry Chicken
Ingredients
- 3 lbs. bone-in chicken thighs
 - 8 sprigs fresh rosemary
 - 2 cups pitted cherries
 - 4 cloves garlic minced
 - 1/2 cup olive oil
 - 4 Tbsp. balsamic vinegar
 - 1/2 tsp. salt
 - 1/4 tsp. onion powder
 - 1/4 tsp. dried thyme
 - 1/4 tsp. dried basil
 - 1/4 tsp. dried oregano
 - 1/4 tsp. dried parsley
 
Instructions
- 
										Preheat oven to 400 degrees F.
 - 
										Season chicken with salt, pepper and dried herbs on both sides.
 - 
										Heat large cast iron skillet over medium heat and place chicken skin side down.
 - 
										Cook five minutes or until skin is browned. Flip chicken and turn heat off.
 - 
										In medium mixing bowl, combine cherries, garlic, olive oil, balsamic vinegar and a sprinkle of salt.
 - 
										Pour cherry mixture over chicken and place skillet in preheated oven.
 - 
										Roast 40 minutes or until chicken is cooked through. (Note: Use a meat thermometer to check that chicken is 165 degrees F.)
