Try a festive twist on classic kebabs. This easy recipe is a perfect weeknight meal during this holiday time of year. It’s a delicious way to incorporate more cranberries without the fuss of a big holiday feast. Comprised of grilled chicken, colorful veggies and a sweet and tangy cranberry syrup, these cranberry chicken skewers can be grilled indoors or out. They’re a fun and flavorful option when cranberries are in season!

Ingredients

Cranberry syrup

Instructions

  1. In bowl, marinate chicken by tossing cubed chicken in olive oil, salt, pepper and garlic powder. Marinate 15 minutes.
  2. For cranberry syrup, in small saucepan, combine cranberries, maple syrup, water, salt and cinnamon. Bring to boil, reduce heat, cover let simmer for 10-15 minutes until cranberries burst and mixture thickens. Stir in balsamic vinegar, remove from heat and let cool slightly. (Note: Strain sauce if smoother syrup is desired.)
  3. On skewers, thread chicken cubes, bell peppers and onions, alternating them.
  4. Preheat grill or grill pan to medium-high heat. Grill skewers 10-12 minutes, turning occasionally, until chicken is cooked through and has grill marks.
  5. Serve with cranberry syrup.
