Sometimes you get a craving that only a heaping bowl of pasta can satisfy; but what do you do when you, or your guests, are avoiding gluten or dairy? An easy cauliflower sauce replaces heavy cream in this better-for-you take on carbonara. Shrimp cooks alongside bacon before being tossed with peas, green lentil pasta and a made-from-scratch alfredo for a restaurant-quality meal that’s surprisingly easy to create. The world is full of pastabilities.

Gluten-Free Creamy Shrimp & Bacon Carbonara

Ingredients

Cauliflower carbonara sauce

Instructions

  1. Cook pasta according to package instructions. Drain; set aside.
  2. In large pot, cover cauliflower with water. Boil 15 minutes or until soft. Drain; set aside.
  3. Meanwhile, place bacon in frying pan. Start cooking on low temperature so the bacon can cook in its own fat. Cook 1 minute.
  4. Add shrimp and raise temperature to medium. Continue cooking 4 minutes or until shrimp and bacon are cooked. Set pan aside.
  5. In blender or food processor, combine carbonara sauce ingredients. Blend until completely smooth and creamy.
  6. Add drained pasta, peas and carbonara sauce to bacon and shrimp pan. Stir until well combined. Serve with extra black pepper and fresh parsley.
