- 2 russet potatoes cut into chunks
- 1/2 medium onion chopped
- 1/4 cup lemon juice
- 2 Tbsp. olive oil
- 1/2 tsp. salt
- 1/8 tsp. black pepper
- 1/2 tsp. oregano
- 1/2 tsp. thyme
