Citrusy Green Beans

It’s easy to add culinary sparkle to your celebration with this simple side that refreshes and impresses.

Citrusy Green Beans

  • 4 Tbsp. olive oil (divided)
  • 1 thumb-sized piece ginger (grated or diced)
  • 2 cloves garlic (diced)
  • Juice of 1 orange
  • 1 tsp. orange zest
  • Juice of 1 lemon
  • 1 tsp. lemon zest
  • 1/4 tsp. sea salt
  • 1/4 tsp. black pepper
  • 2 lbs. organic green beans (stems removed)
  1. In sauté pan on low heat, add 2 tablespoons olive oil, ginger and garlic. Stir fry for 2 minutes until golden. Set aside.
  2. In large bowl, whisk together lemon zest and juice, orange zest and juice, 2 tablespoons olive oil, salt and pepper. Set dressing aside.
  3. Bring large pot of water to boil over high heat. Add green beans and cook until bright green and barely tender, about 2 minutes.
  4. Drian beans and shake off any excess water. Transfer to bowl with dressing. Add garlic and ginger. Toss well to combine.
