There’s a time and a place for pumpkin pie, and it’s usually when a large group gathers at a big table for a festive feast. But for more intimate nights at home, cozy up with pumpkin pie dessert parfaits for two. Spiced and maple-sweetened pumpkin cream is layered between whipped coconut cream and crushed cookies for a luscious dessert that’s sure to delight your taste buds – and your guest’s, too! The best part? It’s made with wholesome ingredients!

Pumpkin Pie Dessert Parfaits

Ingredients

Pumpkin Cream Layer

Whipped Cream Layer

Instructions

  1. Prepare pumpkin cream layer. Scoop out thick portion of refrigerated coconut milk (reserve liquid for another use) and combine in bowl with remaining ingredients. With an immersion blender, combine until smooth. (An immersion blender works best, but use a mixer if needed.)
  2. Chill pumpkin mixture for two hours or more to thicken.
  3. In clean bowl, blend chilled coconut whipping cream and set aside.
  4. Crush cookies with rolling pin.
  5. To make parfaits, add ½ cup pumpkin mixture to each glass. Layer with ¼ cup whipping cream and ½ cup crushed cookies. Add another ½ cup pumpkin mixture and top with ¼ cup whipping cream.
