Single-Serve Summer Quinoa Salad With Avocado & Mango

Ingredients

Salad

  • 1 cup quinoa
  • 2 cups water
  • 1/4 tsp. salt
  • 1/2 red bell pepper diced
  • 1/2 cup corn kernels fresh or frozen
  • 1 mango diced
  • 1 avocado diced
  • 1/4 cup red onion diced
  • 1/4 cup cilantro chopped

Dressing

Instructions

  1. In fine mesh strainer, rinse quinoa thoroughly.
  2. In sauce pan, bring 2 cups water with salt to boil; add quinoa, reduce to simmer, cover and cook about 15 minutes until water is absorbed. (Note: Cooked grain appears soft & translucent.)
  3. Divide quinoa into 4-8 small serving jars or bowls.
  4. In medium bowl, toss together red pepper, corn, mango, avocado, onion and cilantro. Drizzle on dressing and toss and stir to coat.

  5. Top each jar or bowl of quinoa with veggie mixture. Serve immediately.
