This creative skillet casserole features a hearty Tex-Mex filling (with meat, beans, tomato and corn!) and a soft cornbread “tamale” topping that melts in your mouth. Need a veg version? Skillet Tamale Pie with Cornbread Topping

Instructions

  1. Preheat oven to 400 degrees F
  2. In a medium pot, cook ground beef on medium-high heat until cooked through.
  3. Drain any excess fat by pushing meat to one side of pot, absorbing oil with paper towels. (Note: Take caution working with hot oil.)
  4. Stir in spices, corn, beans and tomatoes.
  5. Pour meat and veggies into a cast iron skillet or 9-inch baking pan.
  6. In medium mixing bowl, stir together masa, salt, water, milk and egg.
  7. Evenly spread masa over meat and veggie mixture.
  8. Bake 20-25 minutes until brown on top.
