Anyone who says smoking is bad for you obviously hasn’t smoked their own baby back ribs. The slow-cooked meat simply falls off the bone with every bite, but nothing can ‘beet’ the homemade BBQ sauce. Made from scratch, this condiment includes red beet powder, apple cider vinegar and a few other tasty ingredients that blend together into a beautifully vibrant sauce with an unbeatably sweet taste.

Smoked Baby Back Ribs with Red Beet BBQ Sauce

Ingredients
- 2 racks baby back ribs membrane removed
- 1 stick Irish butter cut into slices
- Rib rub
- 1 cup brown sugar
- Clover honey
- Apple juice
BBQ sauce
- 6 oz. tomato paste
- 1/4 cup apple sauce
- 1/2 cup rib juice drippings
- 1 Tbsp. red beet powder
- 1 Tbsp. apple cider vinegar
- 1 Tbsp. raw honey
- 2 Tbsp. Worcestershire sauce
- 1/2 Tbsp. onion powder
- 1/2 Tbsp. garlic powder
- 1 tsp. yellow mustard powder
- 1 tsp. sea salt
- 1/2 tsp. cayenne pepper
Instructions

Preheat smoker to 275 degrees F.

Season meat with rib rub. Let sit 15 minutes. Smoke ribs for 2 hours and 30 minutes. Remove and spray with apple juice.

On two large sheets of foil, arrange ribs. Top each with a few chunks of sliced butter, brown sugar and honey. Wrap each packet tightly. Place back in smoker for 2 hours.

In large pot, mix together BBQ sauce ingredients. Place sauce in smoker for 30 to 45 minutes.

Remove ribs from foil. Place back on grill. Coat with sauce. Continue cooking 30 more minutes.
