Vegan “Mozzarella” Sticks

Though they’re reminiscent of the kind you enjoyed as a kid, these “mozzarella” sticks are made with vegan-friendly ingredients. Stuffed with creamy, homemade cashew “cheese,” breaded in a blend of gluten-free flours and pan-fried to golden perfection, they’re not just a replacement for the traditional appetizer – they’re even better! Each stick is soft and melty on the inside, perfectly crunchy on the outside and begging to be dipped in marinara sauce

Instructions

  1. Line baking tray with baking paper.
  2. In high-speed blender, blend together all cashew “mozzarella” ingredients until smooth. Transfer mixture to prepared baking tray; freeze 1 hour.
  3. Meanwhile, in large bowl, mix together breading ingredients.
  4. Cut “cheese” into 12 separate 3” sticks. If sticks are dry, dip in Milkadamia Milk to wet them. Place each stick into breading, covering generously.
  5. In pan over medium-high heat, heat coconut oil. Working in batches, fry “mozzarella” sticks until golden brown and center is warmed and melty, about 1 to 2 minute each side.
