					Ingredients
- 2 cups black beans cooked
- 1 cup quinoa cooked
- 3 garlic cloves chopped
- 1 tomato diced
- Handful of vegan cheese
- 1/3 cup green and red bell peppers chopped
- 2 Tbsp. parsley chopped
- 1 tsp. dried chipotle
- 1 tsp. smoked paprika
- 1/2 tsp. cumin
- 1 egg
- Pinch of salt
- 2 Tbsp. all-purpose flour
- 2 Tbsp. coconut oil
- 1/3 cup breadcrumbs
Instructions
- 
										Add all ingredients to large bowl and mix well.
- 
										With hands, form medallions from mixture and set aside.
- 
										Place medallions on oiled baking sheet and bake for 20 minutes at 350 degrees F. or until golden brown.
- 
										Remove from oven and serve.
