This dairy-free white lasagna is made healthier not only with plant-based (veggie-packed!) “cheese,” it’s also layered with heart-healthy salmon, spinach and gluten-free green lentil noodles. No need to pre-boil the pasta – it cooks to tender in the oven. This dish’s elegant, savory flavors elevate it to gourmet level. But you only need to be a beginner-level cook to bring it to the table.

Salmon & Spinach White Lasagna (Dairy Free & Gluten-Free)

Ingredients

Cauliflower “cheese”

Instructions

  1. Preheat oven to 400 degrees F.
  2. In large pot, boil cauliflower for 15 minutes or until soft. Drain.
  3. In frying pan with oil, cook salmon on each side for several minutes. (Note: Salmon will continue cooking in oven). Set aside.
  4. In blender, combine cauliflower and “cheese” sauce ingredients; blend until completely smooth.
  5. In 9x13 lasagna pan, spread 1 cup “cheese” sauce. Top with 6 lasagna sheets. Layer 2/3 cup sauce on top to completely cover noodles. Top with spinach, 1-1/2 salmon filets (broken into small pieces) and half of mozzarella cheese. Top with 6 lasagna sheets, then remainder of cauliflower sauce. Sprinkle on remaining mozzarella.
  6. Bake lasagna for 35-40 minutes.

Tips:

  1. If using smaller lasagna pan, add more layers.
  2. Be sure to cover noodles completely with sauce to ensure proper cooking.
