Ingredients
- 1-½ cups quick oats
- ½ cup gluten-free all-purpose flour
- 1 tsp. cinnamon
- ½ tsp. baking powder
- ½ tsp. baking soda
- ¼ tsp. Himalayan pink salt
- ⅓ cup brown sugar
- ¼ cup sugar
- ½ cup applesauce
- ¼ cup coconut oil
- 1 Tbsp. egg replacer
- 2 Tbsp. water
- 1 tsp. vanilla

Preheat oven to 375 degrees F. Line baking sheet with parchment paper.

In medium bowl, sift together oats, flour, cinnamon, baking powder, baking soda and salt.

Stir in remaining ingredients until batter is fully mixed.

Scoop 1 Tbsp. batter per cookie onto baking sheet.

Using back of fork, gently flatten cookie to ¼-inch thickness.

Bake 13 minutes until golden brown. Cool before eating.
