Made with oat flour, rolled oats, coconut sugar and flaxseed meal, they’re naturally sweet, wonderfully chewy and delightfully easy to make. Want a twist? Toss in a handful of chocolate chips alongside the raisins for extra sweetness.
Vegan Oatmeal Raisin Cookies
- 3/4 cup oat flour
- 3/4 cup rolled oats
- 1/4 tsp. salt
- 1/2 tsp. baking powder
- 1/4 cup coconut oil
- 1/4 cup coconut sugar
- 1 Tbsp. whole ground flaxseed meal
- 1/4 cup water
- 1/4 cup raisins
- Preheat oven to 350 degrees F.
In medium mixing bowl, stir together oat flour, rolled oats, salt and baking powder.
- Add remaining ingredients. Stir to combine.
- Scoop 1 tablespoon batter per cookie onto baking sheet.
- Bake 12 minutes. Cool before serving.
