Bob's Red Mill Organic Chia Seeds Description

Blueberry Chia Jam
3 cups fresh Blueberries
1/4 cup Agave Nectar
1/4 cup Chia Seed
1/2 tsp Vanilla Extract
Combine berries and agave in a small saucepan. Cook over medium heat until berries begin to soften and burst, about 5 minutes. Add chia seed and cook, stirring often, until very thick, about 15 minutes. Remove from heat and let cool. Add vanilla extract. Store in the refrigerator up to 7 days. Makes 10 servings.

The secret is to add fresh orange zest to the mix for mouthwatering bursts of flavor. Top your citrusy stack with sliced oranges, blood oranges and grapefruit, add a dollop of coconut yogurt, drizzle on some honey and finish with a sprinkling of chia seeds for a delicious and healthy way to start the day.
Gluten-Free Citrus Pancakes
- 1 Tbsp. water
- 2 tsp. avocado oil or melted coconut oil (plus more for cooking)
- 1 egg
- Zest of 1/2 an orange
- 1/2 cup Simple Mills Pancake & Waffle Mix
- Orange slices
- Blood orange slices
- Grapefruit pieces
- Coconut yogurt
- Chia Seeds
- In large mixing bowl, whisk together egg, water, oil and orange zest. Add mix and whisk until well blended.
- On lightly oiled griddle or skillet over medium heat, pour batter using 1-1/2 Tbsp. batter for each pancake. Cook until edges are slightly browned, flip and brown other side. Repeat until all batter is used.
- Transfer pancakes to plate and add toppings as desired.
