Dear Friends,

When it comes to grains, beans and seeds, we think nature got it right. We honor this innate perfection by keeping our foods simple, and our white sesame seeds are an excellent example of that practice. They are simply seeds from the sesame plant that have had their outer coating removed to reveal the wondrous nutritional bounties stored within. It doesn't get much simpler than that. And we think that's just how it should be.

To your good health,

Bob Moore

Directions

Store in a cool, dry place. Keeps best refrigerated or frozen after opening.

Tahini

10 oz Sesame Seeds

1/2 cup Extra Virgin Olive Oil

Preheat oven to 350°F. Evenly spread the sesame seeds on a baking sheet.

Toast the seeds in the oven for about 10 minutes, stirring a couple times to ensure the edges do not get too brown. Let cool for at least 20 minutes.

Once cooled pour sesame seeds into a food processor, turn on the processor and drizzle the olive oil into the seeds. Process about 1-2 minutes, until creamy. Tahini can be stored in the refrigerator for about a week. Makes about 1¼ cups.

Roasted Sweet & Spicy Maple Cauliflower

Cauliflower has been having a moment in the spotlight for a while now – and for good reason! Like broccoli, cabbage and kale, it’s in the nutrient-dense family of cruciferous vegetables that are low in calories and high in vitamins and fiber. Plus, there are so many ways to enjoy cauliflower. (Have you tried it in a smoothie?) When roasted, cauliflower boasts a sweet nuttiness. Here, the natural flavors of yellow and purple varieties are enhanced with maple syrup, mild heat from sriracha and a touch of acidity from lime. This pretty side dish further extends the power of the mighty cauliflower. Sweet & Spicy Roasted Purple & Yellow Cauliflower on a Stoneware Plate | Vitacost.com/blog

Roasted Sweet & Spicy Maple Cauliflower

  • 1 large head yellow cauliflower
  • 1 large head purple cauliflower
  • 1/3 cup plus 1 Tbsp. maple syrup
  • 2 Tbsp. sriracha
  • 2 Tbsp. olive oil
  • Juice of half large lime
  • Salt (to taste)
  • Pepper (to taste)
  • ½-1 tsp. sesame seeds
  • 1 scallion (sliced)
  1. Preheat oven to 425 degrees F. Line large baking sheet with parchment paper.
  2. In large mixing bowl, combine maple syrup, sriracha, olive oil and lime juice. Mix and season with salt and pepper. Set aside.
  3. Cut each head of cauliflower into florets and add to mixing bowl. Toss gently to coat.
  4. On baking sheet, arrange even layer of cauliflower. (Note: Use two baking sheets if needed. Do not overcrowd or add any excess sauce to pan as cauliflower will steam and not roast.)
  5. Bake 20 minutes, flipping halfway through.
  6. Increase oven temperature to 475 degrees and bake for 7-10 more minutes or until golden-brown.
  7. Serve warm garnished with sesame seeds and sliced scallions.

Note: Add more or less sriracha based on heat preference.
