Homemade Apple-Cheddar Bread
- ½ cup diced dried apples
- 1 cup very warm milk
- ½ cup whole wheat pastry flour
- 1-1/2 cups unbleached white flour
- 2 Tbsp. brown sugar
- 2 tsp. baking powder
- ½ tsp. salt
- 2 eggs
- 1-1/4 cups grated sharp cheddar cheese (divided)
- Preheat oven to 400 degrees F. Grease 8x4-inch loaf pan.
- In medium-sized bowl, soak dried apples in warm milk for 10 minutes.
- In large bowl, combine dry ingredients; set aside.
- Add eggs to bowl with milk-soaked apples and whisk. Fold in dry ingredients and one cup of cheddar cheese.
- Pour batter into loaf pan and sprinkle with remaining cheese.
- Bake about 40 minutes or until toothpick inserted in center comes out clean. Let cool 30 minutes before slicing.
