Nutritional yeast adds a cheesy twist, while a quick pan-fry in avocado oil delivers irresistible golden edges. Finish with a bright squeeze of lemon and serve alongside a fresh salad for a wholesome, feel-good meal you’ll want to make on repeat.

A Light Blue Plate Has Eight Vegetable Fritters With a Side of Creamy Dipping Sauce.

Vegetable Fritters

  • 1 cup cauliflower florets (steamed)
  • 1 cup broccoli florets (steamed)
  • ½ cup zucchini (shredded)
  • 2 eggs
  • 1/2 cup organic feta cheese
  • 1 Tbsp. nutritional yeast
  • 1 tsp. smoked paprika
  • 1 tsp. garlic powder
  • Salt and pepper to taste
  • 1 cup organic all-purpose flour
  • 1 lemon
  • Avocado oil
  1. In large bowl, add shredded zucchini and cooked cauliflower and broccoli florets. Using a fork or potato masher, smash and combine ingredients.
  2. Add all other ingredients, saving flour until the end, and mix well.
  3. In nonstick frying pan, heat oil over medium heat.
  4. Using a wet tablespoon, scoop fritters into frying pan and cook until golden brown, around 4 minutes on each side.
  5. For serving, squeeze fresh lemon juice on top of the fritters.
  6. Enjoy with fresh side salad.
