This sweet stack will give you all the happy camper feels (but in your own kitchen!). No need to pitch a tent or build a fire to prep these pancakes. Simply combine a few ingredients in a bowl to make the batter, flip those flapjacks on a pan, then top with roasted marshmallows
and a generous drizzle of melted chocolate. To roast marshmallows in the oven, line ‘em up on a baking sheet and broil until tops are toasted golden brown.
- 1 cup all-purpose flour
- 1 Tbsp. coconut sugar
- 1 Tbsp. baking powder
- 3/4 cup graham cracker crumbs
- 1 egg (beaten)
- 1 tsp. sea salt
- 1 cup milk of choice ((I used 2%))
- Marshmallows (roasted)
- 1 chocolate bar
- Coconut oil (avocado oil or vegetable oil)
- Cooking spray
- In large bowl, whisk flour, coconut sugar, baking powder, salt and graham crackers. Add egg and milk and combine well.
- Heat griddle or pan to medium-low heat. Add a little cooking spray then a knob of butter. Once butter is melted add about 1/4 pancake mix to the pan. Let pancakes cook until bubbles start to form before flipping.
- Break up chocolate bar into glass bowl or dish. Add a splash of oil and microwave for 30 seconds to melt.
- To build pancakes, spread on butter and top with toasted marshmallows and melted chocolate.
