Salmon and Balsamic Strawberries

There are so many ways to prepare salmon, but if you’ve never served it with marinated strawberries than you’ve been missing out on a perfect combination of flavors. Quick, sweet and sure to be a recurring favorite in your home, try this easy dinner tonight!

4 salmon fillets (6 oz.), skinned
1-1/2 cups strawberries, hulled and halved
1/2 cup balsamic vinegar
4 cups Simple Truth Organic Orange Juice 
1 Tbsp. Simple Truth Organic Extra Virgin Olive Oil
Salt and pepper, to taste


  1. In small bowl, combine strawberries, vinegar and orange juice. Let stand 15 minutes. 
  2. Season both sides of salmon with salt and pepper. Brush grill pan with olive oil and heat pan (or skillet) over medium-high heat until very hot. Add fish to pan and cook 4 minutes on one side. Turn and cook for 4 minutes more or until salmon flakes easily. 
  3. Transfer salmon to plates. Using a slotted spoon, remove strawberries from vinegar and spoon over the salmon.
