Baked Chicken with Homemade Cranberry Sauce

Cranberries are considered a superfood due to their high nutrient and antioxidant content. Bursting with tartness, they expertly complement poultry, as you’ll discover in this simple and delicious recipe. Combining a sweet-sour tang with the French savoriness of herbs de Provence

For cranberry sauce:
- 2 cups fresh cranberries
- ? cup water
- ? cup orange juice with pulp
- 2 whole star anise
- ? cup sugar
- 1 lb. chicken breasts
- 3 Tbsp. olive oil
- 1 Tbsp. white wine vinegar
- ¼ tsp. salt
- ? tsp. black pepper
- ¼ tsp. herbs de Provence
- Preheat oven to 400°F. Marinate chicken in olive oil, vinegar and spices while oven is heating.
- In medium saucepan, combine cranberries, water, orange juice, star anise and sugar. Bring to a boil. Remove from heat, stir and cover.
- Cook chicken for 25-35 minutes until juices run clear and chicken reaches internal temperature of 165°F.
- To serve, pour cranberry sauce over chicken or leave on side.
