Restorative Golden Miso Soup with Turmeric & Kale

This soup is ideal for those days when you feel under the weather, when you want to boost your immune system or you just feel like spooning up something comforting for your soul. It’s brimming with superfood spices such as ginger and turmeric, well known for their abilities to support health. This feel-good soup is simple to make, but doesn’t taste simple, with layers of flavor that include miso and coconut milk. Restorative Golden Miso Soup with Turmeric & Kale

  • 1-2 Tbsp. coconut oil
  • 2 tsp. ginger (minced)
  • 1 tsp. minced turmeric root (or 2 tsp. turmeric powder)
  • 2 garlic cloves (minced)
  • 2 cups shitake mushrooms (sliced)
  • 1 cup white button mushrooms (sliced)
  • ½ cup shredded carrots
  • 4 cups miso broth
  • 1 can 13.5 oz. full fat coconut milk
  • ½ cup baby kale (chopped)
  • 1 tsp. cayenne pepper
  • 1 tsp. brown sugar
  • Black pepper ( to taste)
  • Real salt or Himalayan pink salt (to taste)
  • Lemon slices

Note: if you prefer to use miso paste, add 4-5 cups of water and 1-2 Tbsp. miso paste.

  1. In stock pot over medium heat, sauté garlic, ginger and turmeric in coconut oil until fragrant.
  2. Add carrots and mushrooms. Season with salt, pepper, brown sugar, cayenne pepper. Mix well. Sauté 5 minutes.
  3. Pour in miso broth and coconut milk. Stir to combine.
  4. Add kale, stir and simmer for 20-25 minutes.
  5. Serve with lemon slices.
