Homemade Tomato Salsa
Once you make it yourself, you won’t buy from a shelf! This homemade salsa recipe is easy to whip up and so tasty that you won’t go back to the jarred kind. Nothing premade beats fresh flavors! The ingredients and seasonings can be adjusted to your preferences, but this batch gets a zesty kick from cilantro and jalapenos and a subtle touch of sweetness from honey. For a variation, add in fruits like mango, peach or watermelon.
Makes 2 cups
3 medium vine ripe tomatoes, chopped
1/4 red onion, minced
1 garlic clove, crushed
1/4 cup fresh cilantro, chopped
1-2 jalapenos (depending on desired heat, 1 for mild), seeded, membrane removed and diced
1 Tbsp. red wine vinegar
1 Tbsp. olive oil
1 Tbsp. honey
1/4 tsp. pink salt
1/4 tsp. black pepper
Juice of 1 lime
- In small bowl, combine vinegar, olive oil, honey salt, pepper and lime juice.
- In food processor, combine all ingredients, including vinegar mixture and pulse 2-4 times depending on preferred consistency.
- Pour into bowl and serve immediately or cover and refrigerate for up to 3 days.
