Parmesan & Garlic Roasted Carrots
Carrots are the workhorse of the vegetable world, adding bright color, appealing crunch and nutritional benefits to many dishes. Make sure to let them shine on their own once in a while! These roasted parmesan garlic carrots are both easy and elegant; a perfect side dish that goes with anything. They’re welcome on a holiday table with baked ham, with a quick weeknight
chicken dinner or in a vegetarian feast. Carrots for the win – again!
Parmesan & Garlic Roasted Carrots
- 2 lbs. baby carrots (ends chopped, or large carrots (cut to less than 1-inch thick))
- 1/4 cup olive oil
- 1 Tbsp. minced garlic
- Salt to taste
- Pepper to taste
- Olive oil cooking spray
- Fresh parsley
- 2 oz. shaved parmesan cheese
- Preheat oven to 400 degrees F.
- In bowl, toss carrots with olive oil, garlic, salt and pepper.
- On baking sheet with cooking spray, arrange carrots.
- Roast for 20-25 minutes, until tender.
- Sprinkle on parmesan and parsley before serving.
